Unlike
the Chef Trotter's legendary Chicago restaurant, Charlie Trotter's, Restaurant Charlie will offer an a la
carte menu, as opposed to a degustation, or "preset" menu. Guests will be able
to create a totally customized menu that suites their desires.

The
spacious dining room, with 20 feet tall ceilings and a walk-through wine cellar
will offer such dishes as Slow Poached
Tasmanian Ocean Trout with Savoy Cabbage and Trout Roe-Shiso Vinaigrette; Poached Maine Lobster in Yellow Curry with
Lotus Root, and Steamed Casco Bay Cod
with Lemon Curd . There will also be plenty of non-seafood selections such
as Seared 32 Day Dry Aged Rib Eye with
Roasted Garlic, Fingerling Potato Puree and Rosemary; Organic Lamb Rack with Braised Shoulder,
Manchego Cheese and Cumin, and True
Japanese Kagoshima Beef Strip Loin with Ponzu and Chinese Black
Mustard.

Charlie
will be a seafood bar unlike any other and will be our "restaurant within a
restaurant." The intimate, counter only dining area will seat approximately 18
guests. Expect the ultimate expression of luxury seafood with many other
surprises woven into the menu. Dungeness
Crab Salad with Avocado, Cucumber, and Amazake; Sake Steamed Abalone with Fresh
Horseradish, Water Chestnuts and Sea Water Emulsion; Chu-toro with Yuzu and
Daikon; Yakitori Grilled Octopus with Sunchoke Puree and Kanzuri. Guests
will enjoy a Kaiseki-style Trotter experience prepared right in front of them.
There will two menus, a six-course or fourteen-course, menu to choose from.
Imagine everything known about traditional sushi, then add-in Chef Trotter's
twists and surprises and there you have it! This exclusive experience will be
nearly impossible to reserve so we suggest book early in order to avoid
disappointment.
KITCHEN
TABLE LOFT
Hovering
high above the kitchen, the glistening stainless steel and glass Kitchen Table
Loft provides a birds eye view of the symphony of activity in Chef Trotter's
kitchen. Our kitchen table accommodates up to eight guests and will offer a
spontaneous "tasting" menu highlighting the wide breath of foodstuffs that
literally arrived that day. The ultimate way to experience Chef Trotter's
cuisine is to simply sit back and let him cook. Our Sommeliers will also be more
than happy to augment your experience with a customized wine pairing for each of
the courses. This table will book months in advance so be sure to schedule well
ahead.

keeping with Chef Trotter's pursuit for using only the freshest and purest
ingredients, it only seems natural that his drinks menu would follow suit.
Offering two cocktail menu styles: Vintage pre-prohibition classics and
modern.
Vintage
Pre-Prohibition:
The
Sazarac is a true classic from the
mid 1800's. Developed by Antoine Amedee Peychaud in
New Orleans
and known as
Americas
first cocktail. Ours is
made with a splash of absinthe, Hine Triomphe Cognac, Bulleit 6 Year Old
Bourbon, Organic Simple Syrup, Peychaud's Bitters, and Angostura Bitters, with
Meyer lemon peel.
The
New Style Manhattan with Bulleit 6
Year Old Bourbon, Noilly Prat Sweet Vermouth Sorbet, and our Bing Cherry Cotton
Candy, garnished with a stemmed Bing Cherry ice cube! This drink is served
tableside per order.
The
Moderns:
The
Ruby Fresh has its roots in the
classic Greyhound but breaks away with a Japanese twist. We use Square One
Organic Vodka, house made Yuzu mixture, fresh Ruby Grapefruit Juice and essence
of grapefruit with a ginger candied grapefruit sliver.
The
Yucatan Flip is full of flavor and
made with Herradura Silver Tequila, Cointreau, fresh Meyer lemon juice, fresh
squeezed orange juice, fine cracked black pepper, organic egg white, and a hint
of Agave nectar.
Restaurant
Charlie is
located on the Casino level of the Palazzo Resort and will be open for dinner
only seven days a week beginning service at 5:00 p.m. Private Dining options are
