Citrus Cured Smoked Salmon

From the icy cold water of Canada and Maine comes the fresh natural salmon Charlie Trotter has selected to bear his name. A dry cure of kosher salt and brown sugar begins the curing. Next, a special fusion of citrus juices and zests are combined with toasted spices and fresh herbs to complete the cure. The salmon is applewood smoked and finished by hand.
