Darjeeling Tea & Ginger Cured Smoked Salmon

Our Darjeeling tea and ginger cured smoked salmon begins with a dry cure of kosher salt, brown sugar, and five toasted spices. Next, a fusion of Darjeeling tea and ginger are steeped together with fresh citrus zest and added to the cure. The salmon is smoked using a unique blend of Michigan fruitwood and Darjeeling tea leaves, then finished by hand to Chef Trotter's exacting standards.
